quince ratafia

whole nutmeg

Instructions
Tear madeleines into pieces, soak in ratafia for 10 minutes.
Mix grated nutmeg into custard and set aside.
Halve pears, remove cores, arrange in bowl, pour in 1cm of poaching liquor.
Layer madeleines over pears, spoon custard, then top with cream and sprinkle dukkah.
Serve with a big spoon, enjoy immediately.
Notes
Chill the trifle for best flavor before serving.
