A delightful layered dessert combining fragrant spices, poached pears, and creamy textures for an elegant treat.

Ingredients

Madeleines

  • 350 g madeleines
  • 100 ml quince ratafia
  • 0.5 whole nutmeg nutmeg, grated
  • 450 ml custard (good-quality shop-bought)

Poached Pears

Long Pepper Cream

Sweet Dukkah

Instructions 

  • Tear madeleines into pieces, soak in ratafia for 10 minutes.
  • Mix grated nutmeg into custard and set aside.
  • Halve pears, remove cores, arrange in bowl, pour in 1cm of poaching liquor.
  • Layer madeleines over pears, spoon custard, then top with cream and sprinkle dukkah.
  • Serve with a big spoon, enjoy immediately.

Notes

Chill the trifle for best flavor before serving.
