These no-bake Carrot Cake Energy Balls are a healthy and delicious snack, packed with natural sweetness and wholesome ingredients.

Ingredients

Dried ingredients

  • 1 cups medjool dates (pits removed)
  • 1/3 cup shredded carrots
  • 1 cup walnuts
  • 1 tbsp chia seeds
  • 1/3 cup shredded unsweetened coconut
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • pinch salt
  • 1 tsp vanilla extract
  • extra 1/2 cup shredded coconut for rolling

Instructions 

  • Add all ingredients to a food processor and pulse until combined.
  • Scoop dough and roll into balls.
  • Roll each ball in shredded coconut to coat.
  • Refrigerate for at least one hour to firm up.
