Ingredients

Dry Ingredients

  • 1 cup Rolled Oats
  • 2 scoops Protein Powder (Vanilla)
  • 6 tablespoons Coconut Flour
  • 2 teaspoons Ground Cinnamon
  • teaspoon Salt

Wet Ingredients

  • 1.5 tablespoons Coconut Oil
  • 2 large Egg Whites
  • 2 teaspoons Vanilla Extract
  • 3 ounces Syrup (Sugar Free)
  • 3 ounces Carrots
  • 2 tablespoons Cream Cheese (Fat Free)
  • ¼ container Greek Yogurt (Fat Free Vanilla)
  • ½ teaspoon Vanilla Extract

Instructions 

  • Mix dry ingredients in one bowl and wet ingredients in another.
  • Combine dry and wet mixtures, then fold in grated carrots and optional add-ins.
  • Chill dough for 20-30 minutes, then shape onto a lined baking sheet.
  • Bake at 325°F (162°C) for 10-13 minutes until golden.

Notes

Chilling the dough helps prevent spreading during baking.
