Ingredients

Base

  • 1 tablespoon extra-virgin olive oil
  • 0.5 medium yellow onion, chopped
  • 0.5 teaspoon sea salt
  • 3 cloves garlic, smashed
  • 1 pound carrots, roughly chopped
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon apple cider vinegar
  • 3 cups vegetable broth
  • to taste black pepper freshly ground black pepper
  • 1 teaspoon maple syrup, optional
  • for garnish Coconut milk, optional

Instructions 

  • Heat olive oil in a large pot over medium heat. Add onion, salt, and pepper; cook until soft, about 8 minutes.
  • Add garlic and carrots; cook for another 8 minutes, stirring occasionally.
  • Stir in ginger, vinegar, and broth; bring to a boil, then simmer for 30 minutes until tender.
  • Cool slightly, then blend until smooth. Add water if needed for desired consistency. Mix in maple syrup if using.
  • Serve hot with a drizzle of coconut milk if desired.
