Instructions
Heat olive oil in a large pot over medium heat. Add onion, salt, and pepper; cook until soft, about 8 minutes.
Add garlic and carrots; cook for another 8 minutes, stirring occasionally.
Stir in ginger, vinegar, and broth; bring to a boil, then simmer for 30 minutes until tender.
Cool slightly, then blend until smooth. Add water if needed for desired consistency. Mix in maple syrup if using.
Serve hot with a drizzle of coconut milk if desired.
