A warm and creamy carrot ginger soup that's perfect for a cozy meal or a healthy starter.

Ingredients

Vegetables

  • 4 cups chopped carrots (about 1 pound)
  • 1 medium yellow onion (diced)
  • 3 cloves garlic (minced)
  • 2 tablespoons grated fresh ginger
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 2 tablespoons lemon juice (from about 1 lemon)

Seasoning

  • to taste salt and pepper

Instructions 

  • Heat olive oil in a large pot over medium heat. Sauté onions and garlic until translucent (5 min).
  • Add carrots and ginger; cook for 7 minutes until slightly softened.
  • Pour in vegetable broth, bring to a boil, then simmer for 20 minutes until carrots are tender.
  • Stir in coconut milk and lemon juice; simmer for 5 minutes.
  • Blend the soup until smooth. Season with salt and pepper to taste. Serve hot.

Notes

For a creamier texture, blend the soup longer or add a splash more coconut milk.
