A warm and creamy carrot ginger soup that's perfect for a cozy meal or a healthy starter.
Ingredients
Vegetables

chopped carrots
(about 1 pound)

medium
yellow onion
(diced)

cloves
garlic
(minced)

tablespoons
grated fresh ginger

low-sodium vegetable broth

full-fat coconut milk

tablespoons
lemon juice
(from about 1 lemon)

Instructions
Heat olive oil in a large pot over medium heat. Sauté onions and garlic until translucent (5 min).
Add carrots and ginger; cook for 7 minutes until slightly softened.
Pour in vegetable broth, bring to a boil, then simmer for 20 minutes until carrots are tender.
Stir in coconut milk and lemon juice; simmer for 5 minutes.
Blend the soup until smooth. Season with salt and pepper to taste. Serve hot.
Notes
For a creamier texture, blend the soup longer or add a splash more coconut milk.
