A delightful layered dessert combining the warm spices of chai with creamy custard and whipped cream, perfect for special occasions.

Ingredients

Dairy

  • 4 1/2 cups whole milk
  • 1 1/2 tbsp loose black tea (or 2 tea bags)
  • 1 cup sugar
  • 1/3 cup cornstarch
  • Kosher salt Kosher salt
  • 5 large egg yolks (beaten)
  • 2 tsp vanilla extract
  • 1/2 cup unsalted butter (softened to room temperature)
  • ½ cup vegetable oil
  • 1 1/2 cup granulated sugar
  • 4 eggs eggs
  • 1 tbsp vanilla extract
  • 3 cups all purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp kosher salt
  • 1 tbsp Chai Masala (see note)
  • 1 1/4 cup buttermilk
  • 1 cup heavy whipping cream (cold)
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract

Instructions 

  • Brew the black tea in milk, then strain and set aside.
  • Prepare the custard by whisking egg yolks, sugar, cornstarch, and vanilla, then cook with the tea-infused milk until thickened.
  • Let the custard cool, then layer with cake or biscuits soaked in chai, and top with whipped cream.
  • Whip the heavy cream with powdered sugar and vanilla until soft peaks form, then layer on top.
  • Refrigerate for at least 2 hours before serving to allow flavors to meld.

Notes

Adjust sweetness and spice levels to taste. Using high-quality chai masala enhances flavor.
