Instructions
Preheat oven to 400°F (200°C).
Simmer maple syrup, butter, spices, and pepper for 2 minutes; stir in vanilla and salt.
Roll puff pastry into a rectangle, spread ricotta, drizzle with spiced maple, arrange apples, fold edges, brush with maple, and sprinkle sugar.
Bake for 25-35 minutes until golden; cool slightly and serve with remaining spiced maple and ice cream.
