Ingredients

Streusel

  • 0.75 cup rolled oats
  • 0.5 cup whole wheat flour
  • 1.5 teaspoons cinnamon
  • 0.5 cup brown sugar
  • 0.5 cup melted butter

Filling

  • 0.5 cup butter, softened
  • 2 tablespoons honey
  • 0.5 teaspoon vanilla extract

Dry ingredients for muffins

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 0.75 cup brown sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 0.25 teaspoon ground allspice
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground cardamom
  • 0.5 teaspoon salt

Wet ingredients

  • 1 cup milk
  • 0.25 cup vegetable oil
  • 1 large egg
  • 1 1/4 cups pear, peeled and chopped

Instructions 

  • Preheat oven to 400°F (200°C). Line muffin pan with liners.
  • Prepare streusel: combine oats, flours, cinnamon, sugar, and butter; chill.
  • Mix softened butter, honey, and vanilla for filling.
  • Whisk dry ingredients; add wet ingredients and chopped pear; mix.
  • Fill muffin cups ¾ full, top with streusel, and bake 20 minutes.
