Chocolate and Butter
3ouncesunsweetened chocolate(broken into pieces)
6tablespoonsunsalted butter(cut into 8 pieces)
1cupgranulated sugar
2largeeggs(room temperature)
1teaspoonvanilla extract
½cupall-purpose flour
¼teaspoonbaking soda
¼teaspoonkosher salt
2tablespoonswater
2tablespoonssemi-sweet chocolate chips
Cheesecake Topping
8ouncescream cheese(softened to 65ºF (19ºC))
¼cupgranulated sugar
1largeegg(room temperature)
1teaspoonvanilla extract
Instructions
Preheat oven to 350ºF (177ºC) and prepare an 8x8-inch pan with foil and spray.
Melt chocolate and butter over low heat, then whisk in sugar, eggs, and vanilla. Mix dry ingredients separately and fold into chocolate mixture. Prepare brownie batter and set aside 2 tbsp for marbling.
Mix cream cheese, sugar, egg, and vanilla until smooth for the cheesecake layer. Spread over brownie batter, then swirl with reserved batter and top with chocolate chips.
Bake for 20 minutes, tent with foil, then bake until center reaches 195-200ºF (91-93ºC). Cool in pan for 1.5-2 hours before slicing.
