Delicious and nutritious no-bake energy bites packed with cherries, almonds, and vanilla for a quick snack.
Ingredients
Dried Fruits and Nuts

dates soaked in warm water for 20 minutes

cup
almonds
2/3
cup
oats
1 tablespoon + 1 teaspoon
tablespoons
vanilla
3/4
cup
dried cherries

tablespoon
pure maple syrup
Instructions
Blend almonds until crumbly, then add dates, syrup, and vanilla; blend until sticky.
Scrape mixture into a bowl, then add oats and cherries; mix well.
Rub hands with coconut oil, then roll mixture into one-inch balls.
Place balls on parchment paper and refrigerate for 30 minutes.
Store in fridge for up to a week or freeze for longer storage.
Notes
Keep mixture moist for easier rolling by adding a little more syrup if needed.
