Delicious and nutritious no-bake energy bites packed with cherries, almonds, and vanilla for a quick snack.

Ingredients

Dried Fruits and Nuts

  • 1 cup dates soaked in warm water for 20 minutes
  • 3/4 cup almonds
  • 2/3 cup oats
  • 1 tablespoon + 1 teaspoon tablespoons vanilla
  • 3/4 cup dried cherries
  • 1 tablespoon pure maple syrup

Instructions 

  • Blend almonds until crumbly, then add dates, syrup, and vanilla; blend until sticky.
  • Scrape mixture into a bowl, then add oats and cherries; mix well.
  • Rub hands with coconut oil, then roll mixture into one-inch balls.
  • Place balls on parchment paper and refrigerate for 30 minutes.
  • Store in fridge for up to a week or freeze for longer storage.

Notes

Keep mixture moist for easier rolling by adding a little more syrup if needed.
