These homemade chewy granola bars combine the warmth of cinnamon with fresh apple pieces for a delicious, wholesome snack.

Ingredients

Dry ingredients

  • 2 cups rolled oats (about 180g)
  • 1/2 cup all-purpose flour (can substitute almond flour for gluten-free)
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

Wet ingredients

  • 1 medium apple (peeled and finely chopped, about 1 cup)
  • 1/3 cup brown sugar (70g)
  • 1/4 cup unsalted butter (melted, 56g (can substitute coconut oil))
  • 2 tablespoons honey (can substitute maple syrup or agave nectar)
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped nuts (walnuts or pecans, optional, 30g)
  • 1/4 cup raisins or dried cranberries (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment.
  • Mix dry ingredients; in a separate bowl, combine wet ingredients.
  • Combine wet and dry, fold in apples and optional nuts or dried fruits.
  • Press mixture into the pan and bake for 20-25 minutes until edges are golden.
  • Cool completely, then lift out and cut into bars.

Notes

Press firmly to ensure bars hold together well.
