These homemade chewy cinnamon granola bars are perfect for a quick snack or breakfast on the go, combining oats, nuts, dried fruits, and a hint of cinnamon.

Ingredients

Dry ingredients

  • 2 cups rolled oats (divided)
  • 1 teaspoon fine sea salt
  • 0.5 teaspoon ground cinnamon
  • 0.5 cup chopped pecans
  • 0.5 cup dried cranberries (roughly chopped)
  • 0.5 cup raisins (roughly chopped)

Wet ingredients

  • 0.25 cup smooth almond butter
  • 0.25 cup melted coconut oil
  • 0.25 cup pure maple syrup

Instructions 

  • Preheat oven to 350F (180°C). Line an 8x8 inch pan with parchment.
  • Blitz 1/2 cup oats into flour. Mix dry ingredients and stir in nuts and dried fruits.
  • Whisk together wet ingredients. Combine with dry mixture until coated.
  • Press mixture into pan, bake for 20-25 minutes until golden. Cool and refrigerate for 30 minutes.
  • Slice into 12 bars and store in an airtight container in the fridge for up to 7 days.

Notes

For best texture, store bars in the fridge.
