A comforting and easy-to-make casserole combining tender chicken, fresh broccoli, and cheesy rice in a creamy sauce.
Ingredients

cooked shredded or diced chicken breast or thighs
Vegetables

fresh broccoli florets, steamed until tender-crisp

finely chopped onion
Aromatics

garlic, minced

cooked long-grain white or brown rice (preferably day-old)
Canned Goods

condensed cream of mushroom or cream of chicken soup

milk or cream
Cheese

shredded cheddar cheese or cheese blend, divided

black pepper

dried thyme or 1 tablespoon fresh parsley (optional)
Instructions
Cook rice and steam broccoli until tender. Shred chicken and chop onion and garlic.
Mix condensed soup with milk, salt, pepper, and herbs. Add sautéed onion and garlic.
Combine rice, broccoli, chicken, and sauce. Reserve some cheese for topping.
Transfer to a greased dish, sprinkle remaining cheese, and bake at 350°F (175°C) for 25-30 minutes.
Let rest for 5 minutes before serving to meld flavors.
Notes
Use day-old rice for best texture and flavor.
