Ingredients

Protein

  • 2 pounds boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1.5 teaspoons kosher salt
  • 1 teaspoon ancho chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Mexican oregano
  • 1 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 2 tablespoons lime juice (about 1 lime)

Rice and Toppings

  • 1 cup long-grain white rice (rinsed and drained)
  • 1 clove garlic (minced)
  • 2 cups broth or water
  • 0.5 teaspoon kosher salt (plus more to taste)
  • 0.25 cup chopped cilantro
  • 1 lime zested and juiced

Additional Toppings

  • to taste shredded lettuce
  • to taste shredded cheese or queso
  • to taste pico de gallo or black bean and corn salsa
  • to taste guacamole
  • to taste sour cream, Mexican crema, or plain Greek yogurt
  • to taste roasted tomato salsa or salsa verde

Instructions 

  • Cook the cilantro lime rice: sauté rice in oil, add garlic, broth, and salt; simmer for 15 minutes.
  • Season the chicken: coat chicken thighs with oil and spices, then cook in a skillet until fully cooked and dice.
  • Fluff the rice and stir in lime zest, lime juice, and cilantro.
  • Assemble bowls with chicken, rice, and toppings like lettuce, cheese, salsa, guacamole, and sour cream.
