Ingredients

Protein

  • 2.5 lbs boneless skinless chicken thighs
  • 0.5 can chipotle peppers in adobo sauce
  • 0.5 medium red onion
  • 0.5 Tbsp olive oil
  • 1 Tbsp garlic minced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp cumin
  • 2.5 cups cooked rice
  • 2 Tbsp cilantro chopped
  • 1 tsp olive oil
  • 1 Tbsp lime juice
  • 5 Roma tomatoes Roma tomatoes
  • 0.5 medium red onion
  • 0.25 cup cilantro chopped
  • 1 Tbsp lime juice
  • 1 jalapeño pepper jalapeño pepper
  • to taste Salt and pepper
  • 2 avocados avocados
  • 0.5 cup pico de gallo
  • to taste Lime juice, salt, and pepper
  • 2 medium red peppers
  • 2 medium green peppers
  • 0.5 medium red onion
  • 1 Tbsp olive oil

Instructions 

  • Season chicken with cumin, salt, pepper, and minced garlic, then cook until browned.
  • Prepare rice and chop vegetables, including tomatoes, red onion, peppers, and cilantro.
  • Mix lime juice with chopped cilantro and set aside.
  • Slice avocados and prepare pico de gallo.
  • Assemble bowls with rice, chicken, vegetables, avocado, and pico de gallo, then drizzle with lime juice.
