A delicious and easy-to-make Chicken Caesar Pasta Salad combining tender chicken, pasta, crisp lettuce, and creamy dressing for a satisfying meal.

Ingredients

Protein

  • 2 pieces chicken breasts (about 1 lb)
  • 2 tablespoons olive oil
  • 1 juice from 1/2 a lemon lemon juice
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1.5 cups dry rotini pasta (not tri-color)
  • 1 large head romaine hearts
  • 0.5 small yellow onion (sliced thin)
  • 1 cup parmesan cheese (shredded from the block)
  • 0.75 cup Caesar dressing (Marzetti's)
  • 1 cup croutons (homemade or store-bought)

Instructions 

  • Slice each chicken breast in half to create thin cutlets, then marinate with salt, pepper, spices, olive oil, and lemon juice. Let sit for 10-15 minutes.
  • Cook chicken in a skillet over medium heat for 4 minutes per side until cooked through, then dice and cool.
  • Boil pasta until al dente, rinse with cold water, and drain thoroughly.
  • Combine lettuce, pasta, onion, half the parmesan, and Caesar dressing in a bowl. Toss to combine.
  • Top salad with diced chicken, remaining parmesan, croutons, and additional dressing if desired. Serve immediately.

Notes

For extra flavor, marinate the chicken longer or add more dressing to taste.
