A fresh and hearty salad featuring tender chicken, crunchy romaine, and protein-rich quinoa, all tossed in a flavorful Caesar-inspired dressing.

Ingredients

romaine

  • 8 cups romaine, chopped
  • 12 ounces shredded cooked chicken breast (such as rotisserie)
  • 1 cup uncooked quinoa (prepared according to package instructions)
  • 0.25 cup parmesan cheese, grated
  • 2 tablespoons extra virgin olive oil
  • 0.25 cup lemon juice
  • 1 tablespoon anchovy paste (optional)
  • 1 tablespoon dijon mustard
  • 1 clove garlic, minced

Instructions 

  • Divide romaine, chicken, and quinoa into four bowls.
  • Prepare the vinaigrette by whisking together olive oil, lemon juice, anchovy paste, dijon mustard, garlic, salt, and pepper.
  • Drizzle the dressing over each bowl and toss gently.
  • Top each bowl with grated parmesan cheese and serve.

Notes
