A comforting and hearty chicken noodle soup perfect for any day. Easy to prepare and full of flavor.

Ingredients

Broth and liquids

  • 1 tablespoon olive oil
  • 8 cups chicken broth

Vegetables

  • 1 medium onion, diced
  • 2 large carrots, sliced
  • 2 celery stalks celery, sliced
  • 3 cloves garlic, minced

Protein

  • 2 cups shredded cooked chicken

Seasonings

  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste Salt and pepper

Noodles

  • 2 cups egg noodles

Garnish

  • Fresh parsley, chopped Fresh parsley (for garnish)

Instructions 

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until tender, about 5-7 minutes.
  • Stir in garlic and cook for 1 minute. Pour in chicken broth and bring to a boil.
  • Add shredded chicken, thyme, parsley, salt, and pepper. Reduce heat and simmer for 10 minutes.
  • Stir in egg noodles and cook until tender, about 8-10 minutes. Garnish with fresh parsley before serving.

Notes

Feel free to add more vegetables or adjust seasonings to taste.
