A vibrant and healthy pasta dish loaded with fresh vegetables and tender chicken, perfect for a quick weeknight dinner.

Ingredients

Pasta

  • 8 oz rotini pasta

Protein

  • 1 lb chicken breast, boneless and skinless

Vegetables

  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper diced
  • 1 zucchini diced

Other

  • 2 tbsp olive oil, divided
  • 2 cloves garlic, minced
  • 1/2 tsp Italian seasoning
  • to taste Salt and pepper
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain and set aside.
  • Season chicken with salt, pepper, and Italian seasoning. Cook in a skillet with 1 tbsp olive oil until golden and cooked through, then rest and slice.
  • Sauté garlic in remaining olive oil, add vegetables, and cook until slightly tender.
  • Combine cooked pasta with vegetables, add cherry tomatoes, and cook for 2-3 minutes. Season as needed.
  • Top with sliced chicken, Parmesan, and basil. Serve warm.

Notes

For extra flavor, add a squeeze of lemon or a sprinkle of red pepper flakes.
