A vibrant and healthy pasta dish loaded with fresh vegetables and tender chicken, perfect for a quick weeknight dinner.
Ingredients
Pasta

rotini pasta

chicken breast, boneless and skinless
Vegetables

cup
broccoli florets
1
cup
cherry tomatoes, halved
1
red bell pepper
diced
1
zucchini
diced

olive oil, divided

cloves
garlic, minced

Italian seasoning
to taste
Salt and pepper
1/4
cup
grated Parmesan cheese
Fresh basil for garnish (optional)
Instructions
Cook pasta in salted boiling water until al dente, then drain and set aside.
Season chicken with salt, pepper, and Italian seasoning. Cook in a skillet with 1 tbsp olive oil until golden and cooked through, then rest and slice.
Sauté garlic in remaining olive oil, add vegetables, and cook until slightly tender.
Combine cooked pasta with vegetables, add cherry tomatoes, and cook for 2-3 minutes. Season as needed.
Top with sliced chicken, Parmesan, and basil. Serve warm.
Notes
For extra flavor, add a squeeze of lemon or a sprinkle of red pepper flakes.
