Instructions
Heat oil in a large pot over medium heat. Cook onion and celery until soft, about 6 minutes. Add garlic and red pepper flakes; cook 1 minute.
Add chicken broth and lemon juice; bring to a boil. Add chicken breasts, simmer until cooked, 10-12 minutes.
Remove chicken, shred with forks, then return to pot. Add artichokes, cheeses, and cream; cook until melted. Stir in spinach, garnish, and serve.
Notes
For a creamier texture, add more heavy cream or cheese as desired.
