Ingredients

Protein

  • 1.5 lb boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 1 each lime (Juice of 1 lime)

Carbohydrates

  • 3 cups cooked white rice
  • 1 cup canned black beans, drained
  • 1 cup corn kernels

Vegetables & Fruits

  • 0.5 cup cherry tomatoes, halved
  • 1 each avocado (sliced)
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup sour cream
  • 2 cups chopped romaine lettuce

Toppings

  • to taste Fresh cilantro (for topping)
  • to taste Lime wedges (for serving)

Instructions 

  • Mix olive oil, spices, and lime juice; coat chicken. Let sit 15 mins.
  • Cook chicken in a skillet 5-6 mins per side until browned. Rest and slice.
  • Heat black beans and corn for 2-3 mins. Prepare rice with lime juice.
  • Assemble bowls with rice, lettuce, beans, corn, tomatoes, avocado, cheese, chicken, sour cream, cilantro, and lime wedges.

Notes

For extra flavor, marinate the chicken longer or add hot sauce.
