Ingredients

Olive Oil

  • 2 tablespoons Olive Oil

Yellow Onion

  • 1 medium Yellow Onion (chopped)

Garlic Clove

  • 2 cloves Garlic Clove (minced)

Celery Stalk

  • 2 stalks Celery Stalk (chopped)

Carrot

  • 1 medium Carrot (diced)

Salt

  • 1 teaspoon Salt

Black Pepper

  • 0.5 teaspoon Black Pepper

Dried Oregano

  • 1 teaspoon Dried Oregano

Chicken Stock

  • 4 cups Chicken Stock

Jasmine Rice

  • 0.5 cup Jasmine Rice (rinsed)

Salt

  • to taste Salt

Chopped Parsley

  • 2 tablespoons Chopped Parsley (for garnish)

Instructions 

  • Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, celery, and carrot; sauté until vegetables are tender.
  • Add chicken stock, dried oregano, salt, and black pepper; bring to a boil.
  • Stir in jasmine rice and cook until rice is tender, about 15 minutes.
  • Add cooked shredded chicken if desired, then season with additional salt and pepper to taste. Garnish with chopped parsley before serving.

Notes

For extra flavor, add cooked shredded chicken or other preferred proteins.
