Instructions
Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, celery, and carrot; sauté until vegetables are tender.
Add chicken stock, dried oregano, salt, and black pepper; bring to a boil.
Stir in jasmine rice and cook until rice is tender, about 15 minutes.
Add cooked shredded chicken if desired, then season with additional salt and pepper to taste. Garnish with chopped parsley before serving.
Notes
For extra flavor, add cooked shredded chicken or other preferred proteins.
