Delicious and moist muffins packed with ripe bananas and chocolate chips, perfect for a quick breakfast or snack.

Ingredients

Bananas

  • 3 large ripe bananas, mashed
  • 0.75 cup granulated sugar
  • 1.5 cups all-purpose flour
  • 0.25 cup unsalted butter, melted
  • 0.25 cup milk
  • 1 large egg
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup chocolate chips
  • 1 teaspoon vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C). Line a muffin tin with liners or grease.
  • Mix mashed bananas and sugar until combined. Add melted butter, milk, egg, and vanilla; mix well.
  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to wet ingredients, stirring until just combined.
  • Fold in chocolate chips. Divide batter evenly into muffin cups.
  • Bake for 20-25 minutes until a toothpick comes out clean. Cool in tin for 5 minutes, then transfer to wire rack.

Notes

For extra flavor, add a handful of chopped nuts or more chocolate chips.
