These delicious and healthy energy balls are perfect for a quick snack, combining dates, coconut, and cacao for a satisfying treat.

Medjool dates, pitted

desiccated coconut, shredded
(unsweetened plus more for rolling)

raw cacao powder
(or unsweetened cocoa powder)

hemp seeds

Instructions
Line a baking sheet with parchment paper and place extra shredded coconut in a small bowl for rolling.
In a food processor, blend dates, coconut, cacao powder, hemp seeds, and water until a sticky mixture forms. Add more water if needed.
Take spoonfuls of the mixture, roll into balls, then coat in the extra shredded coconut.
Place the balls on the prepared sheet and freeze for 2 hours to set.
Allow to thaw briefly before enjoying. Store leftovers in the fridge or freezer.
Notes
Keep the mixture slightly moist for easier rolling.
