These delicious and healthy energy balls combine roasted hazelnuts, dates, cacao, and vanilla for a quick snack that’s perfect anytime.

Ingredients

Hazelnuts

  • 1.5 cups hazelnuts (toasted and cooled)
  • 10 large Medjool dates (soaked and drained)
  • 2.5 tablespoons cacao powder (unsweetened)
  • 0.5 tsp vanilla extract
  • 1-2 tablespoons water (as needed to bind mixture)

Instructions 

  • Preheat oven to 325ºF (160ºC). Toast hazelnuts on a baking sheet for 8-10 minutes, then cool and rub off skins.
  • Add toasted hazelnuts, soaked dates, cacao powder, and vanilla to a food processor. Process until mixture is sticky and holds together when pressed, adding water as needed.
  • Use a heaping tablespoon to roll mixture into balls or press into an 8x8 pan for bars. Chill in fridge for up to 2 weeks or freeze for 3-4 months.
