These delicious and healthy energy balls combine roasted hazelnuts, dates, cacao, and vanilla for a quick snack that’s perfect anytime.
Ingredients
Hazelnuts
1.5cupshazelnuts(toasted and cooled)
10largeMedjool dates(soaked and drained)
2.5tablespoonscacao powder(unsweetened)
0.5tspvanilla extract
1-2tablespoonswater(as needed to bind mixture)
Instructions
Preheat oven to 325ºF (160ºC). Toast hazelnuts on a baking sheet for 8-10 minutes, then cool and rub off skins.
Add toasted hazelnuts, soaked dates, cacao powder, and vanilla to a food processor. Process until mixture is sticky and holds together when pressed, adding water as needed.
Use a heaping tablespoon to roll mixture into balls or press into an 8x8 pan for bars. Chill in fridge for up to 2 weeks or freeze for 3-4 months.
