Chocolate Peanut Butter Energy Bars

Delicious homemade energy bars combining dates, peanut butter, oats, and chocolate for a nutritious snack.

Ingredients

Dried Fruits

  • 0.75 cup chopped Medjool dates
  • 1 cup smooth natural peanut butter
  • 0.5 cup rolled oats (see Tip)
  • 0.25 teaspoon salt
  • 0.5 cup chopped unsalted dry-roasted peanuts
  • 0.75 cup bittersweet chocolate chips

Instructions 

  • Soak dates in hot water for 10 minutes, then drain, reserving the water.
  • Line an 8-inch square pan with parchment, coat with cooking spray.
  • Process dates, peanut butter, oats, and salt until finely chopped; add reserved water if dry. Stir in peanuts.
  • Press mixture into pan; melt chocolate chips and spread over top. Refrigerate for 1 hour, then cut into 16 squares.

Notes

Keep mixture firm when pressing into the pan for best results.
