Delicious homemade energy bars combining dates, peanut butter, oats, and chocolate for a nutritious snack.
Ingredients
Dried Fruits

chopped Medjool dates

smooth natural peanut butter

rolled oats

chopped unsalted dry-roasted peanuts

bittersweet chocolate chips
Instructions
Soak dates in hot water for 10 minutes, then drain, reserving the water.
Line an 8-inch square pan with parchment, coat with cooking spray.
Process dates, peanut butter, oats, and salt until finely chopped; add reserved water if dry. Stir in peanuts.
Press mixture into pan; melt chocolate chips and spread over top. Refrigerate for 1 hour, then cut into 16 squares.
Notes
Keep mixture firm when pressing into the pan for best results.
