A flavorful roast chicken infused with herbs and citrus, perfect for festive occasions.

Ingredients

Main

  • 2 kg Free range whole chicken
  • 1 big orange (for zest and cavity)
  • 100 g Butter
  • 3 oranges oranges (or 2 large oranges)
  • 1 lemon lemon
  • 2 carrots carrots
  • 1 big onion
  • 1 garlic head garlic
  • 1 spring rosemary
  • 3 Sage leaves Sage leaves
  • 1 spring thyme
  • a handful parsley
  • to taste Salt and pepper
  • 1 cup low sodium chicken stock

Instructions 

  • Bring chicken to room temperature and pat dry.
  • Preheat oven to 200°C (400°F).
  • Loosen skin, season chicken with salt and pepper, and prepare vegetables.
  • Mix herbs with butter and orange zest, rub on chicken, stuff cavity, and place on vegetables in pan.
  • Pour stock into pan and roast until internal temperature reaches 165°F (75°C), about 2 hours.
