Instructions
Bring chicken to room temperature and pat dry.
Preheat oven to 200°C (400°F).
Loosen skin, season chicken with salt and pepper, and prepare vegetables.
Mix herbs with butter and orange zest, rub on chicken, stuff cavity, and place on vegetables in pan.
Pour stock into pan and roast until internal temperature reaches 165°F (75°C), about 2 hours.
