Ingredients

Dairy

  • 1 1/2 cups whole milk
  • 1/3 cup short-grain rice
  • 1 teaspoon vanilla extract (dash)
  • 2 teaspoons cinnamon
  • 2 tablespoons sugar or sweetener
  • Splash water if needed
  • 1 1/2 cups diced apples (about 2 medium)
  • 1 tablespoon butter
  • 1 teaspoon cinnamon
  • 1 tablespoon sugar or sweetener
  • 1 tablespoon lemon juice
  • 1/3 cup heavy cream
  • 1 cup ricotta cheese
  • 1 teaspoon sugar or sweetener (optional)

Instructions 

  • Bring milk to a boil, add rice, vanilla, cinnamon, sugar, and salt. Simmer until rice is soft, then cool.
  • Cook diced apples with butter, lemon juice, cinnamon, and sugar until tender, then cool.
  • Whip heavy cream with sugar until fluffy, then fold in ricotta cheese.
  • Mix ricotta cream into cooled rice pudding, then serve topped with cinnamon apples.

Notes

Chill the pudding and apples separately if making ahead, then assemble before serving.
