Instructions
Bring milk to a boil, add rice, vanilla, cinnamon, sugar, and salt. Simmer until rice is soft, then cool.
Cook diced apples with butter, lemon juice, cinnamon, and sugar until tender, then cool.
Whip heavy cream with sugar until fluffy, then fold in ricotta cheese.
Mix ricotta cream into cooled rice pudding, then serve topped with cinnamon apples.
Notes
Chill the pudding and apples separately if making ahead, then assemble before serving.
