Ingredients

Fruits and liquids

  • 5 pieces ripe peaches (skins removed)
  • 3 tablespoons fresh lemon juice
  • 1/3 cup maple syrup
  • 1/4 cup dark brown sugar
  • 1/2 - 1 teaspoon ground cinnamon
  • 1 vanilla bean vanilla bean

Dry ingredients

  • 2 cups all purpose flour
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon fine sea salt

Wet ingredients

  • 1 3/4 cups milk (whole or part-skimmed)
  • 6 tablespoons unsalted butter (melted)
  • 2 large eggs (beaten)
  • 1 teaspoon vanilla extract

For cooking and garnish

  • as needed for frying sunflower oil (or other neutral oil)
  • to serve Greek yogurt (or coconut yogurt or creme fraiche)
  • to garnish fresh peaches
  • chopped pistachios
  • shredded coconut

Instructions 

  • Puree peaches with lemon juice, maple syrup, brown sugar, cinnamon, and vanilla bean.
  • Mix dry ingredients in a bowl; combine with wet ingredients until smooth.
  • Preheat waffle iron; lightly oil and cook waffles until golden.
  • Top waffles with warm peach sauce, Greek yogurt, chopped pistachios, and shredded coconut.

Notes

Use ripe peaches for the best flavor and adjust cinnamon to taste.
