These delicious Cinnamon Roll Energy Bites are a perfect snack for a quick energy boost, combining the flavors of cinnamon and white chocolate.

Ingredients

Base Ingredients

  • 1 cup natural creamy almond butter (see notes)
  • cup pure maple syrup
  • ½ cup vanilla protein powder
  • 2 teaspoons vanilla extract
  • ½ cup rolled oats
  • 1 teaspoon salt (see notes)
  • 1 ½ teaspoons cinnamon
  • ½ cup white chocolate chips
  • 1 teaspoon coconut oil

Instructions 

  • Mix almond butter, maple syrup, protein powder, vanilla extract, oats, salt, and cinnamon in a bowl until thick.
  • Drop batter onto a lined baking sheet using a mini cookie scoop.
  • Roll each ball to smooth edges.
  • Melt white chocolate chips and coconut oil in the microwave, then drizzle over the bites.
  • Refrigerate for 1 hour until hardened, then store in an airtight container.

Notes

For a creamier texture, use a high-quality almond butter.
