Delight in fluffy pancakes with a cinnamon swirl and cream cheese glaze, inspired by cinnamon rolls.

Ingredients

Batter

  • 1 piece egg
  • 0.25 cup apple sauce
  • 2 tablespoons maple syrup
  • 2/3 cup milk of choice (almond milk used)
  • 1 teaspoon vanilla extract
  • 0.75 cup oat flour
  • 0.75 cup gluten free all purpose baking flour (can substitute regular flour)
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon cinnamon

Cinnamon Swirl

  • 2 tablespoons almond butter
  • 2-3 tablespoons maple syrup (for swirl)
  • 1.5 teaspoons cinnamon

Cream Cheese Glaze

  • 4 ounces plain cream cheese (dairy free or regular)
  • 2 tablespoons milk
  • 0.5 teaspoon vanilla
  • 0.5 cup powdered sugar

Instructions 

  • Whisk together the cinnamon swirl ingredients and set aside.
  • Mix wet ingredients, then add dry ingredients and whisk until combined.
  • Heat a non-stick skillet over medium/low heat, then pour batter and swirl cinnamon mixture on top.
  • Cook for 2 minutes, flip, then cook 1-2 more minutes. Repeat until batter is used.
  • Whisk together glaze ingredients and drizzle over pancakes. Enjoy!

Notes

Adjust maple syrup for desired sweetness and consistency of the swirl.
