Delicious and healthy protein cupcakes with a cinnamon swirl, perfect for a quick snack or breakfast.

Ingredients

Main

  • 2 large Whole Eggs
  • 1.5 scoops Protein Powder (Vanilla)
  • 1.5 cups Rolled Oats (or Coconut Flour)
  • 4 ounces Milk Substitute (or Milk)
  • 1.5 tablespoons Sweetener
  • 5.3 ounces Greek Yogurt (Fat Free Vanilla)
  • 2 teaspoons Vanilla Extract
  • 2.5 teaspoons Ground Cinnamon
  • 2 teaspoons Baking Powder

Instructions 

  • Process oats into flour using a blender or processor.
  • Mix all ingredients in a bowl until combined.
  • Prepare silicone cups on a baking sheet and spray with non-stick spray.
  • Distribute batter evenly into cups, leaving 1/4 inch space at the top.
  • Bake at 350°F (176°C) for 10-15 minutes.
  • Allow to cool and enjoy!

Notes

Using a silicone cup makes for easy removal and cleanup.
