Instructions
Combine almond milk and apple cider vinegar; set aside to curdle.
Mix flour, baking powder, cinnamon, and salt in a large bowl.
Whisk flax seeds into the milk mixture until frothy, then add to dry ingredients with water, oil, maple syrup, and vanilla. Mix until combined, then fold in figs and walnuts.
Preheat waffle iron, let batter rest briefly, then cook waffles, spraying with oil as needed. Serve with extra walnuts and fig halves.
Notes
For extra flavor, sprinkle with additional walnuts and sliced figs before serving.
