Ingredients

Dairy Substitutes

  • 2 cups almond milk (vanilla or plain), or your fave non-dairy milk
  • 1 tablespoon apple cider vinegar

Dry Ingredients

  • 2 cups whole wheat pastry flour ((all purpose works, too))
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Ground Flax Seeds

  • 2 tablespoons ground flax seeds
  • 1/2 cup water
  • 3 tablespoons olive oil
  • 3 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract

Fruits and Nuts

  • 1 cup dried black mission figs (stem nub removed, thinly sliced)
  • 1 cup walnuts (roughly chopped)

Instructions 

  • Combine almond milk and apple cider vinegar; set aside to curdle.
  • Mix flour, baking powder, cinnamon, and salt in a large bowl.
  • Whisk flax seeds into the milk mixture until frothy, then add to dry ingredients with water, oil, maple syrup, and vanilla. Mix until combined, then fold in figs and walnuts.
  • Preheat waffle iron, let batter rest briefly, then cook waffles, spraying with oil as needed. Serve with extra walnuts and fig halves.

Notes

For extra flavor, sprinkle with additional walnuts and sliced figs before serving.
