Ingredients

Vegetables

Broth

  • 4 cups Chicken Broth (The base of the soup, use low-sodium if preferred.)

Chicken

  • 2 pieces Boneless, Skinless Chicken Breasts (Make shredding easy.)
  • to taste Salt and Pepper (For seasoning.)
  • 1 teaspoon Dried Oregano (Adds herbaceous notes.)
  • 1 teaspoon Fresh Thyme (Adds herbaceous notes.)
  • 2 bay leaves Bay Leaves (For depth of flavor.)

Instructions 

  • Sauté vegetables in olive oil until tender.
  • Add garlic and cook for 1 minute.
  • Pour in broth, add herbs, and bring to a boil.
  • Cook chicken, shred, and add to soup.
  • Add noodles and simmer until tender.
