Instructions
Preheat oven to 375°F (190°C). Line a muffin tin.
Mix dry ingredients: flour, baking powder, salt.
Whisk wet ingredients: eggs, sugar, coconut oil, coconut milk, vanilla.
Combine wet and dry; fold in coconut and chocolate chips.
Fill muffin cups ¾ full; bake 18-22 mins until golden.
Cool for 5 mins, then transfer to wire rack to cool completely.
