Ingredients

Dry Ingredients

  • 2 cups All-Purpose Flour
  • 1 tbsp Baking Powder
  • ½ tsp Salt

Wet Ingredients

  • ¾ cup Granulated Sugar
  • ½ cup Coconut Oil (melted)
  • ¾ cup Coconut Milk
  • 2 large Eggs
  • 1 tsp Vanilla Extract

Add-ins

  • ¾ cup Shredded Coconut (unsweetened)
  • 1 cup Semi-Sweet Chocolate Chips

Instructions 

  • Preheat oven to 375°F (190°C). Line a muffin tin.
  • Mix dry ingredients: flour, baking powder, salt.
  • Whisk wet ingredients: eggs, sugar, coconut oil, coconut milk, vanilla.
  • Combine wet and dry; fold in coconut and chocolate chips.
  • Fill muffin cups ¾ full; bake 18-22 mins until golden.
  • Cool for 5 mins, then transfer to wire rack to cool completely.

Notes

Use high-quality coconut oil for best flavor.
