Delight in these buttery, coconut-filled bars with a crisp crumble topping, perfect for a sweet treat or dessert.
Ingredients
Dough and Crust

all-purpose flour

granulated sugar

teaspoon
baking powder

teaspoon
salt

cold unsalted butter, cubed
1
large
egg, beaten
1/2
teaspoon
vanilla extract
Filling
3
cups
sweetened shredded coconut
1
14 oz
can sweetened condensed milk
2
teaspoons
vanilla extract
1/2
teaspoon
almond extract (optional)
1/4
teaspoon
salt
1/2
cup
chopped macadamia nuts or almonds (optional)
Instructions
Preheat oven to 350°F (175°C). Line a 9×13 inch pan with parchment and grease.
Mix flour, sugar, baking powder, and salt. Cut in butter until crumbly. Add egg and vanilla; combine.
Press 2/3 of the mixture into the pan for the crust. Reserve the rest for topping.
Mix coconut, condensed milk, vanilla, almond (if using), and salt. Fold in nuts if desired.
Spread coconut filling over crust. Sprinkle reserved crumble on top. Bake 30-35 mins until golden.
Cool completely, then refrigerate at least 2 hours before cutting into bars.
Notes
Refrigerate before cutting for cleaner slices.
