Delight in these tangy lemon bars with a coconut twist, perfect for a refreshing treat.

Ingredients

Crust

  • 1 cup flour
  • ¼ cup confectioner’s icing sugar (for the crust)
  • teaspoon salt
  • ½ cup butter (1 stick)
  • ¾ cup sugar
  • ¼ cup fresh lemon juice
  • grated zest of 2 lemons lemon zest
  • 1 tbsp flour
  • ¾ teaspoon baking powder
  • 2 eggs eggs (slightly beaten)
  • ¾ cup shredded coconut (sweetened)

Optional topping

  • extra icing sugar for dusting

Instructions 

  • Preheat oven to 350°F (175°C). Prepare crust by combining flour, icing sugar, salt, and butter; press into an 8x8-inch pan. Bake for 15 minutes.
  • Mix sugar, lemon juice and zest, flour, baking powder, eggs, and coconut. Pour over baked crust.
  • Bake for 20-25 minutes until golden. Cool, then dust with icing sugar if desired. Cut into bars and serve.

Notes

Use fresh lemons for the best flavor.
