Delight in these tangy lemon bars with a coconut twist, perfect for a refreshing treat.
Ingredients
Crust

confectioner’s icing sugar

Instructions
Preheat oven to 350°F (175°C). Prepare crust by combining flour, icing sugar, salt, and butter; press into an 8x8-inch pan. Bake for 15 minutes.
Mix sugar, lemon juice and zest, flour, baking powder, eggs, and coconut. Pour over baked crust.
Bake for 20-25 minutes until golden. Cool, then dust with icing sugar if desired. Cut into bars and serve.
Notes
Use fresh lemons for the best flavor.
