These delicious low-sugar energy balls combine oats, coconut, and coffee for a quick, energizing snack.

Ingredients

dry ingredients

  • 1 cup oats
  • ¼ cup cocoa
  • 2 tbsp corn syrup

wet ingredients

  • ¼ cup almond butter
  • 2 tbsp melted coconut oil
  • 1 tsp instant coffee
  • 2 tbsp water (if needed) (optional)
  • 2 tbsp flaked coconut

Instructions 

  • Mix oats, cocoa, and flaked coconut in a bowl.
  • Combine almond butter, melted coconut oil, and coffee in a separate bowl.
  • Pour wet ingredients into dry ingredients and mix until well combined. Add water if mixture is too dry.
  • Form mixture into 12 small balls and place on a tray.
  • Refrigerate for at least 30 minutes before serving.

Notes

Store in an airtight container in the fridge for up to a week.
