A delightful treat combining a buttery base with a sweet coconut topping, baked to perfection and cut into squares.

Ingredients

base

  • 0.5 cup butter, (soft/room temperature)
  • 0.5 cup sugar
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract

topping

  • 0.5 cup brown sugar, (lightly packed)
  • 2 tablespoons all-purpose flour
  • 1 cup coconut, (sweetened and shredded)

Instructions 

  • Preheat oven to 350°F (175°C). Line a 9x9 inch pan with parchment paper.
  • Mix butter, sugar, and flour for the base until crumbly. Press into the pan and bake for 10 minutes.
  • Combine topping ingredients just until incorporated. Spread over cooled base.
  • Bake for an additional 20 minutes. Cool completely before cutting into squares.

Notes

Ensure not to overmix the topping for a better texture.
