Ingredients

Wet Ingredients

  • 0.75 cup Unsweetened Apple Sauce
  • 2 large Whole Eggs
  • 5.3 oz Greek Yogurt (Plain Fat Free)
  • 0.125 cup Syrup (Light)
  • 4 oz Milk Substitute (or Milk)
  • 2 teaspoons Vanilla Extract
  • 1 teaspoon Coffee Extract

Dry Ingredients

  • 8 tablespoons Coconut Flour
  • 2 teaspoons Instant Coffee
  • 0.33 cup Sweetener
  • 3 scoops Protein Powder (Vanilla)
  • 0.75 cup Rolled Oats
  • 2 teaspoons Baking Powder

Spice

  • to taste Ground Cinnamon (Your choice)

Instructions 

  • Add all ingredients except cinnamon to a food processor and blend.
  • Pour mixture into a greased muffin pan.
  • Sprinkle cinnamon on top and swirl with a knife.
  • Bake at 350°F (176°C) for 30-40 minutes.
