Ingredients

oil and butter

  • 1 tablespoon olive oil
  • 1 tablespoon butter ((20 g))

vegetables

  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 2 to 3 celery sticks celery, chopped
  • 2 to 3 cloves garlic, minced

herbs

  • 0.5 tablespoon chopped fresh rosemary
  • 0.5 tablespoon chopped fresh thyme

protein

  • 1 pound chicken breast (450 g)

thickening agent

  • 2 tablespoons all-purpose flour

liquids

  • 2 cups milk (475 ml)

potatoes

  • 1.5 pounds potatoes, peeled and cubed (650 g)

broth

  • 4 cups chicken broth (1 liter)

cheese

  • 1 cup low-fat cheddar cheese (120 g)

herbs for garnish

  • a handful roughly chopped fresh parsley
  • to taste salt and freshly ground black pepper

Instructions 

  • Heat olive oil and butter in a large pot over medium heat.
  • Sauté chopped onion, carrots, celery, and garlic until tender.
  • Add chopped chicken and herbs; cook until chicken is cooked through.
  • Stir in flour, then gradually add milk and chicken broth, bringing to a boil.
  • Add potatoes, reduce heat, and simmer until potatoes are tender. Stir in cheese and parsley, season with salt and pepper, and serve hot.

Notes

For a creamier texture, blend a portion of the soup before serving.
