Instructions
Heat olive oil and butter in a large pot over medium heat.
Sauté chopped onion, carrots, celery, and garlic until tender.
Add chopped chicken and herbs; cook until chicken is cooked through.
Stir in flour, then gradually add milk and chicken broth, bringing to a boil.
Add potatoes, reduce heat, and simmer until potatoes are tender. Stir in cheese and parsley, season with salt and pepper, and serve hot.
