Instructions
Sauté diced onion, carrots, and celery in olive oil until tender.
Add minced garlic and dried herbs; cook for 1 minute.
Add chicken, potatoes, broth, and season with salt and pepper; simmer until chicken is cooked and potatoes are tender, about 20 minutes.
Mix flour with a little water to make a slurry; stir into soup to thicken. Add milk and cheese if using; cook for another 5 minutes.
Garnish with chopped parsley before serving.
Notes
For a gluten-free version, substitute flour with cornstarch and ensure broth is gluten-free.
