Ingredients

Protein

  • 1 pound Chicken Breast (or boneless thighs for extra flavor)

Vegetables

  • 2 cups Yukon Gold Potatoes (or red potatoes as a substitute)
  • 1 medium Onion (diced)
  • 2 medium Carrots (diced)
  • 2 stalks Celery (diced)

Aromatics

  • 3 cloves Garlic (minced)
  • 1 teaspoon Dried Herbs (Rosemary, Thyme) (can substitute with Italian seasoning)

Thickening Agents

  • 0.25 cup Plain Flour (or cornstarch for gluten-free)

Dairy & Broth

  • 1 cup Milk (dairy-free optional)
  • 4 cups Chicken Stock (or vegetable stock for vegetarian version)

Cheese & Garnish

  • 0.5 cup Low-fat Cheddar Cheese (optional)
  • 0.25 cup Fresh Parsley (for garnish)
  • to taste Salt & Pepper (to season)

Instructions 

  • Sauté diced onion, carrots, and celery in olive oil until tender.
  • Add minced garlic and dried herbs; cook for 1 minute.
  • Add chicken, potatoes, broth, and season with salt and pepper; simmer until chicken is cooked and potatoes are tender, about 20 minutes.
  • Mix flour with a little water to make a slurry; stir into soup to thicken. Add milk and cheese if using; cook for another 5 minutes.
  • Garnish with chopped parsley before serving.

Notes

For a gluten-free version, substitute flour with cornstarch and ensure broth is gluten-free.
