0.5cupdiced bell peppers
0.5cupdiced onion
0.5cupbaby spinach, chopped

Instructions
Preheat oven to 350°F (175°C). Spray a muffin tin or line with liners.
Whisk eggs in a bowl until well beaten. Mix in cottage cheese until smooth.
Stir in cheddar, bell peppers, onion, spinach, salt, pepper, and garlic powder.
Pour mixture into muffin cups, filling about 3/4 full. Bake for 22-25 minutes until set and golden.
Let cool for 5 minutes, then serve warm or store in fridge for up to 5 days.
