1.5cupscottage cheese
4largeeggs
1teaspoonvanilla extract
Dry Ingredients
1cupflour
2tablespoonssugar
1tablespoonbaking powder
Instructions
Add cottage cheese, eggs, and vanilla to a blender and blend until smooth.
Mix flour, sugar, and baking powder in a bowl. Add wet ingredients and stir until just combined.
Heat a nonstick skillet over medium heat. Pour 1/4 cup batter and cook until edges are dry and bubbles form, about 2 minutes. Flip and cook 1-2 minutes more.
Repeat with remaining batter. Serve with toppings of choice.

For extra flavor, add fresh berries or a drizzle of honey.
