Delicious and fluffy pancakes made with cottage cheese, perfect for a quick breakfast or brunch.

Ingredients

Dairy

  • 1.5 cups cottage cheese
  • 4 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder

Instructions 

  • Add cottage cheese, eggs, and vanilla to a blender and blend until smooth.
  • Mix flour, sugar, and baking powder in a bowl. Add wet ingredients and stir until just combined.
  • Heat a nonstick skillet over medium heat. Pour 1/4 cup batter and cook until edges are dry and bubbles form, about 2 minutes. Flip and cook 1-2 minutes more.
  • Repeat with remaining batter. Serve with toppings of choice.

Notes

For extra flavor, add fresh berries or a drizzle of honey.
