Ingredients

  • 24 oz Full-Fat Cottage Cheese (About 3 cups. Full-fat provides the best texture.)
  • 2 large Eggs (Acts as a binder for the base.)
  • 1 tbsp Italian Seasoning
  • 1 tsp Garlic Powder
  • 0.5 tsp Onion Powder
  • 1 cup Marinara Sauce (Use a no-sugar-added variety for keto.)
  • 2 cups Shredded Mozzarella Cheese (Freshly shredded melts best.)
  • 0.5 cup Pepperoni Slices (Or your favorite pizza toppings.)

Instructions 

  • Preheat oven to 400°F (200°C). Grease a 9x9 inch baking dish.
  • Mix cottage cheese, eggs, Italian seasoning, garlic powder, and onion powder. Spread into dish.
  • Bake for 20 minutes until set.
  • Spread marinara, top with mozzarella and pepperoni. Bake 15-20 minutes until bubbly.
  • Let rest 5-10 minutes before slicing and serving.
