Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 tablespoon sugar (optional)
  • Pinch salt

Wet Ingredients

  • 2 large eggs
  • 1 cup cottage cheese (preferably full-fat)
  • 1/4 cup milk (adjust as needed)
  • 1 teaspoon vanilla extract

Additional

  • Butter or oil for greasing greasing the waffle iron
  • Fresh berries for topping strawberries, blueberries, raspberries
  • Powdered sugar for garnish optional

Instructions 

  • Preheat the waffle iron according to instructions.
  • Mix flour, baking powder, sugar, and salt in a bowl.
  • Beat eggs, then add cottage cheese, milk, and vanilla. Combine with dry ingredients.
  • Grease the waffle iron, pour batter, and cook for 4-6 minutes until golden.
  • Serve warm topped with berries, banana, syrup, and powdered sugar if desired.

Notes

For extra flavor, add a dash of cinnamon or nutmeg to the batter.
