Ingredients

Dry ingredients

  • 1 ¾ cups rolled oats
  • 1 ¼ cup cottage cheese
  • 4 large eggs
  • 1 teaspoon vanilla extract

Instructions 

  • Pulse oats in a food processor until fine.
  • Add eggs, cottage cheese, vanilla; blend until combined. Rest for 5–10 mins.
  • Preheat waffle iron, spray with cooking spray.
  • Pour ⅓ cup batter, cook 5–6 mins until golden. Repeat with remaining batter.
  • Serve warm with fruit and syrup.

Notes

For extra flavor, add a dash of cinnamon or nutmeg to the batter.
