A warm and comforting soup blending sweet carrots with spicy ginger, perfect for a cozy meal.

Instructions
Wash, peel, and chop the carrots; finely chop onion and garlic; grate ginger.
Heat oil in a pot, sauté onions and garlic until translucent (~4-5 min).
Add carrots, cook for 5 min, then stir in ginger and cumin, cook 1-2 min.
Pour in broth, bring to boil, then simmer for 20 min until carrots are tender.
Puree the soup with an immersion blender, season with salt and pepper.
Serve warm, optionally garnished with coconut milk or herbs.
Notes
For a creamier texture, add more coconut milk or a splash of cream.
