A warm and comforting soup blending sweet carrots with spicy ginger, perfect for a cozy meal.

Ingredients

Vegetables

  • 4 pieces Carrots (peeled and chopped)
  • 1 inch Fresh Ginger (peeled and grated)
  • 1 medium Onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 4 cups Vegetable Broth
  • 1/2 cup Coconut Milk (optional)
  • 1 teaspoon Cumin
  • to taste Salt
  • to taste Pepper

Instructions 

  • Wash, peel, and chop the carrots; finely chop onion and garlic; grate ginger.
  • Heat oil in a pot, sauté onions and garlic until translucent (~4-5 min).
  • Add carrots, cook for 5 min, then stir in ginger and cumin, cook 1-2 min.
  • Pour in broth, bring to boil, then simmer for 20 min until carrots are tender.
  • Puree the soup with an immersion blender, season with salt and pepper.
  • Serve warm, optionally garnished with coconut milk or herbs.

Notes

For a creamier texture, add more coconut milk or a splash of cream.
