A warm and hearty stew combining lentils, kale, and vegetables for a comforting meal that's easy to make and nutritious.

Ingredients

Dried Legumes

  • 1 cup green or brown lentils (rinsed)
  • 4 cups vegetable broth (preferably low-sodium)
  • 4 cups kale (chopped)
  • 1 yellow onion diced onion
  • 3 cloves garlic (minced)
  • 2 diced carrots
  • 2 tablespoons olive oil
  • 1 teaspoon cumin powder
  • to taste salt salt
  • to taste pepper pepper
  • 1 can diced tomatoes
  • 1 cup potatoes (diced)

Instructions 

  • In a large pot, heat olive oil over medium heat and sauté diced onion and minced garlic until fragrant.
  • Add diced carrots and potatoes, cook for 5 minutes.
  • Stir in lentils, vegetable broth, diced tomatoes, cumin, salt, and pepper. Bring to a boil.
  • Reduce heat and simmer uncovered for 30-40 minutes until lentils and vegetables are tender.
  • Add chopped kale and cook for another 5 minutes until wilted. Serve hot.

Notes

This stew is perfect for a cozy night and can be stored for leftovers.
