A smooth and flavorful soup combining fresh carrots, ginger, and cream for a comforting and vibrant dish.

Ingredients

Vegetables

  • 600 g carrots (washed, peeled, sliced)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 20 g fresh ginger (peeled and grated)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 700 ml vegetable broth
  • 100 ml cream (or coconut milk)
  • 1 tsp salt
  • ½ tsp black pepper
  • a pinch turmeric (for color)
  • to taste lemon juice (for brightness)

Instructions 

  • Prepare vegetables: wash, peel, slice carrots; dice onion, mince garlic, grate ginger.
  • Cook aromatics: melt butter with olive oil, sauté onion until golden, add garlic and ginger until fragrant.
  • Add carrots, season with salt, pepper, and turmeric if using. Cook briefly.
  • Pour in broth, simmer until carrots are soft. Blend until smooth, stir in cream.
  • Adjust seasoning, add lemon juice if desired. Serve warm.

Notes

For a richer flavor, roast the carrots before adding to the soup.
