Instructions
Prepare vegetables: wash, peel, slice carrots; dice onion, mince garlic, grate ginger.
Cook aromatics: melt butter with olive oil, sauté onion until golden, add garlic and ginger until fragrant.
Add carrots, season with salt, pepper, and turmeric if using. Cook briefly.
Pour in broth, simmer until carrots are soft. Blend until smooth, stir in cream.
Adjust seasoning, add lemon juice if desired. Serve warm.
Notes
For a richer flavor, roast the carrots before adding to the soup.
